Drunken Rocky Road

Rocky road.  Always better when you make it at home.  The ingredients are better, the portions bigger, and you have complete control over how crazy it gets.  So, without further ado, I present Crissy’s Drunken Rocky Road!

Ingredients

– 200g good quality chocolate (I used Cadbury milk chocolate), roughly chopped

– 100ml Bailey’s Irish Cream Liqueur

– 20g unsalted butter

– 1/4 cup sweetened condensed milk

– 70g roughly chopped pistachios

– 75g roughly chopped biscuit (I used shortbread for the colour contrast)

– 130g mini marshmallows (honestly you can add as much or as little as you like)

– 150g white chocolate, roughly chopped (I used Cadbury dream)

– shredded coconut (as much as you like, I find half a cup makes an amazing chewy texture)

Grease a bar pan with butter, line it with cling wrap and baking paper .

Place Bailey’s, milk chocolate, butter and milk in a heatproof bowl over simmering water.

Melting...

Allow to melt, stirring to help it along.  When ready, place aside to cool.

While the chocolate mix is cooling slightly, you can chop up the remainder of the ingredients.

Pistachios and biscuits

Roughly chopped is the way to go.  Provides a pleasing end result.

Loving the colour combos...white chocolate and marshmallows

Stir the ingredients into the chocolate mixture.  Don’t forget the coconut!

Mix it all up!

Spread the mix into your prepared pan, press down to fit it into the corners.

Refrigerate

Chill for at least 3 hours, until firm.  To serve, cut into any size you like.  Finish with a sprinkling of mini marshmallows and some white chocolate.  Delish.

      Thank you! I try to make them look tasty. I should really invest in an actual camera, rather than my iPhone.

      The iphone is always in danger of getting food on it.
