See what I did there?  …ugh.  Christmas makes me happy, and as I realized over the past couple of days on holiday, happy Cristalle makes really bad jokes.  Sorry, everyone.

So, Christmas is over for another year.

Christmas – Easy Fruit Mince

Ah Christmas! How I love thee. My favourite time of year. What’s not to love? It’s mid-summer here in Australia, there’s beach, sun, extended vacation time and, of course, the food! Who could forget Christmas food! …I loooove making Christmas food. I can overlook the bad aspects to Christmas (and yes, grinches, I know there are many), because it’s simply a fun time of year to spend with those you love.

And with all that mushy stuff aside, let’s get to a recipe.

Fun with Rum – Vanilla Extract

I recently came into possession of a very nice bottle of Angostura 7 year old rum.  Now, I don’t drink at home, only when out and about, so I started thinking about other ways I could start to use this unexpected windfall.

Naturally, cooking came to mind.
